There is nothing more comforting to me than a roasted chicken. It’s one of my favorite meals. I crank up the oven and place the washed and thoroughly dried chicken in a cast iron skillet and wait for the crispy, salty goodness to cook. Once it’s brown and crispylicious I take it out of the oven, remove the chicken and deglaze the pan with whatever white wine I’m currently consuming. To cook chicken properly you have to drink wine while it’s in the oven. AmIright? Once the pan is deglazed I throw in some butter for good measure and a little chicken stock. I separate out the grease while hopefully keeping all of the butter and make a delicious pan sauce. While I was drinking wine, waiting on the chicken, I cooked some rice and made some lima beans. I pour the pan sauce liberally over the rice. I reup my wine and eat the most simple, delicious supper.
